Furthermore, chuño provided protection against famine. Communities could store surplus potatoes during productive seasons and use them after a poor harvest. Inca administrators also collected preserved foods and stored them in government warehouses.

How the Potato Reached Europe
Spanish expeditions encountered potatoes after entering the Andes during the sixteenth century. Soldiers and administrators quickly recognized their importance to local communities.
Eventually, Spanish sailors carried the tubers across the Atlantic. Farmers began growing potatoes in Spain during the latter half of the 1500s. From there, botanists, merchants, soldiers and sailors distributed them across Europe.
However, Europeans did not immediately embrace the unfamiliar crop. The potato plant resembled poisonous nightshades, which encouraged suspicion. In addition, the Bible did not mention potatoes, and they did not fit comfortably into established farming traditions.

By the eighteenth century, food shortages and recurring wars encouraged governments to promote potato cultivation. Frederick the Great pushed Prussian farmers to grow them. Meanwhile, French pharmacist and agricultural reformer Antoine-Augustin Parmentier used public dinners, scientific arguments and royal connections to improve the potato’s reputation in France.

The Crop That Helped Build Modern Europe

Additionally, tubers grew underground. Passing armies could burn grain fields or seize stored wheat, but potatoes often remained hidden beneath the soil. Farmers could also harvest them as needed instead of gathering the entire crop at once.
Potatoes required less processing than grain. A family needed a mill to turn wheat or rye into flour. In comparison, they could dig up a potato and cook it directly in a fire or pot.
Most importantly, potatoes supplied dependable calories. A relatively small patch could support a large family when combined with milk, vegetables or small amounts of meat.

Potato Diversity and the Future of Food
The Irish Famine demonstrated the danger of planting genetically similar crops across enormous areas. Modern agriculture has not completely eliminated that risk.
Late blight still threatens potato farms. Viruses, insects, heat, drought and changing rainfall patterns create additional challenges. Because farmers reproduce many potatoes as clones, harmful diseases can move through genetically uniform fields quickly.
Fortunately, the Andes preserve an extraordinary genetic library. Wild species and traditional varieties may contain natural resistance to drought, frost, heat, insects and disease.
The International Potato Center maintains more than 7,000 potato accessions in its genebank. Researchers use this material to develop improved varieties while preserving irreplaceable diversity.
Additionally, potatoes can produce large quantities of food with relatively modest land and water requirements. The International Potato Center reports that one hectare can yield two to four times the food quantity of grain crops. Potatoes can also produce more food per unit of water than many major crops.
For these reasons, scientists view the potato as an important food-security crop. Improved varieties could help farmers feed growing populations under increasingly difficult conditions.
